    OCOPA SAUCE     

   Ingredients :
4 or 5 aj amarillo fresco / fresh yellow aji (chili), seeded and deveined, c
1 large onion, peeled and cut in 8
2 garlic cloves, peeled
3 graham crackers
cup (200 g) farmers cheese (ricotta or feta), diced
3 tablespoons toasted peanuts
Oil (necessary amount)
1 huacatay sprig
cup evaporated milk (approximately)


Fry onions in oil with garlic, aji and huacatay until golden.

Remove from heat.

Place onion mixture in blender. Add graham crackers, cheese, peanuts and milk. Blend until a thick creamy sauce is obtained. If necessary add oil while blending. Season to taste.
