    OCOPA SAUCE     

   Ingredients :
 
4 or 5 ají amarillo fresco / fresh yellow aji (chili), seeded and deveined, c
1 large onion, peeled and cut in 8
2 garlic cloves, peeled
3 graham crackers
¾ cup (200 g) farmers cheese (ricotta or feta), diced
3 tablespoons toasted peanuts
Oil (necessary amount)
1 huacatay sprig
¾ cup evaporated milk (approximately)
Salt
Pepper

   Preparation:

Fry onions in oil with garlic, aji and huacatay until golden.

Remove from heat.

Place onion mixture in blender. Add graham crackers, cheese, peanuts and milk. Blend until a thick creamy sauce is obtained. If necessary add oil while blending. Season to taste.
