   Ingredients :
1 cup fresh pineapple, chopped
cup chopped nuts
1 cup dried figs (raisins may be used), chopped
Orange peel
3 cups carrot, shredded
1 cup oil
4 eggs, lightly beaten
2 cups flour
1 teaspoon salt
2 teaspoons baking powder
2 teaspoons cinnamon powder
1 teaspoon sodium bicarbonate
2 cups brown sugar
cup brandy


Sift flour, salt, baking powder, cinnamon, and baking soda into a medium size bowl. Stir in sugar, pineapple, nuts, figs and orange peel. Add oil, carrot and orange peel, eggs and stir.

Pour brandy and mix thoroughly.

Pour mixture into a greased and floured tube pan. Bake in pre heated oven 350F (180C) for 1 hour.
