    ARTICHOKE PATE     

   Ingredients :
 
6 artichokes
1 cup mayonnaise
1 cup grated parmesan cheese
Salt
Pepper

   Preparation:

In a large pan cook artichokes with water and salt.

Remove tender part from leaves and chop hearts.

Blend or process artichokes with rest of ingredients.

Pour mixture into two buttered baking molds (1 cup each).

Bake in preheated moderate oven 350° F (175° C).

Unmold and serve hot or cold with crackers or melba toasts.

Yields: 2 one-cup molds

Onion paté
Chicken liver paté with green peppercorn
