    GRILLED SOLE WITH ORANGE MAYONNAISE     

   Ingredients :
 
6 sole fillet
1 ¼ cup mayonnaise
3 tablespoons Dijon mustard
6 teaspoons orange juice
½ teaspoon dried tarragon
3 teaspoons drained capers, chopped
¾ teaspoon anchovy paste
2 tablespoons chopped fresh parsley
Salt
Pepper
1 tablespoon cooking oil

   Preparation:

Whisk together mayonnaise, mustard, orange juice, tarragon, capers, anchovy paste, parsley, salt and pepper.

Coat sole with oil and season.

Heat a skillet and cook fish for 3 minutes. Turn and cook until just done.

Serve fish with orange mayonnaise.

Preparation Time: 20 minutes
