Combine oil with sugar with a spoon. Stir in eggs and vanilla.
Sift flour, 3 times, with baking powder and salt and fold into the egg mixture. Add shredded carrots and mix.
Pour mixture into a previously greased and floured tube pan.
Bake in the middle of a preheated oven to 350’°F (180°C) for 50 to 55 minutes.
Remove from the oven and cool. Invert onto a serving plate and serve.
