Heat oil in a large skillet and add zucchini, salt, pepper and thyme. Cook, stirring until zucchini are soft. Stir in green onion and cook 1 minute more.
Place lightly beaten eggs in a bowl and add the zucchini and half the grated cheese. Correct seasonings.
Divide mixture among previously oiled muffin cups. Bake in preheated moderate oven to 375ºF(190ºC) for approximately 14 – 15 minutes or until set. Remove from the oven and sprinkle over the remaining parmesan cheese. Return flans to broil until cheese melts and are lightly golden.
Remove from cups and serve with golden part upside.
