   Ingredients :
2 cups sifted all purpose flour
teaspoon salt
teaspoon pepper
2 teaspoons baking powder
lb (250 g) butter or margarine, at room temperature
1 lb (500 g) grated parmesan cheese
1 teaspoon mustard
1 teaspoon dry thyme, crushed
1 teaspoon dry rosemary, crushed


Sift flour with salt, pepper and baking powder.
Whip butter or margarine and add flour mixture. Add grated cheese, mustard, thyme and rosemary. Combine.
Form inch (2 cm) balls with hands and place cheese balls on a greased cookie sheet. Cover with plastic wrap and refrigerate for 1 hour.
Bake in preheated oven to 350F (180C) for, approximately 20 minutes. Serve cold.
Keep in an airtight container.
        Yields: 60 cheese and rosemary puffs
