   Ingredients :
5 large apples, peeled and cored and thinly sliced
Juice of 1 lemon
Lemon peel
3 tablespoons confectioners sugar
7 oz (200 g) unsalted butter at room temperature
7 oz (200 g) confectioners sugar
4 eggs
7 oz (200 g) flour
2 teaspoons baking powder
1 teaspoon vanilla extract
2 teaspoons ground cinnamon
Brown sugar
Ground cinnamon


Place apples in a bowl and combine with lemon juice and 3 tablespoons of confectioners’ sugar. Set aside for 15 minutes.
Meanwhile, place butter and sugar in the mixer and beat until creamy. Add eggs, 1 by 1, beating well after each addition. Add lemon peel and vanilla.

Sift flour, baking powder and cinnamon 3 times and fold into butter cream.
Butter a 10 ½ inch (26 cm) cake pan. Sprinkle brown sugar tocoat bottom and sides of pan.
Arrange half of apple slices on the bottom of pan and sprinkle cinnamon over. Cover with half of the batter. Repeat the apple slices and the remaining batter.
Bake in a preheated moderate oven to 350ºF (180ºC) for approximately 1 hour. Remove and cool 15 minutes. Invert onto cake platter.
