Sift flour, baking powder, baking soda and salt several times.
Whip butter, add sugar gradually and beat until creamy. Add egg yolks one by one and orange peel. Sift in dry ingredients, alternating with the orange juice.
Whip egg whites until firm and fold into mixture. Pour mixture into a 5 cup capacity tube cake pan, previously buttered and floured.
Bake in preheated oven to 350ºF (180ºC) for 30 to 35 minutes or until cake is done. Remove from oven and cool for 10 minutes. Invert on a rack and glaze with Orange Glaze while still warm.
Orange Glaze: Combine orange juice with sugar. Cook over medium fire until bubbles appear. Continue cooking at low temperature for 5 – 10 minutes until syrup thickens lightly. Brush syrup on cake to glaze. |
