Season pork with salt and pepper and place it in a pan. Pour beer, onion, carrot and herbs. Bring to a boil over low heat and cook until meat is very tender and beer has completed evaporated.
Remove meat from the pan. Cover pork with brown sugar on all sides. Place pork in an oven pan and bake in preheated oven at 380ºF (190ºC) until sugar caramelizes.
Remove from oven and arrange on a serving dish.
Serve with sautéed vegetables or glazed sweet potatoes.
