Remove pulp or flesh from leaves with a spoon and chop artichoke bottoms.
Beat eggs lightly in a bowl and add milk, water, artichokes and parmesan cheese. Season with salt, pepper and nutmeg. Mix well. Transfer to a previously grease ovenproof pan and bake over hot water in a preheated oven to 350°F (180°C) until flan sets. Remove from the oven and cool for 10 minutes. Invert over platter and serve.
