    ARUGULA SALAD WITH MANCHEGO CHEESE, APPLES AND CARAMELIZED NUTS     

   Ingredients :
 
1 cup balsamic vinegar
1 cup nut oil
5 tablespoons white wine vinegar
10 cups arugula
3 red apples, unpeeled, cored and thinly sliced
7 oz (200g) Manchego cheese, shaved
1 ˝ cups dates, seedless, sliced
1 ź cup caramelized nuts *
4 green onions, finely chopped
Salt
Pepper

Caramelized Nuts:
˝ cup sugar
2 tablespoons balsamic vinegar
1 ˝ nuts

   Preparation:

Pour vinegar in a small saucepan and bring to a boil over medium heat until it has reduced to half. Set aside. Whisk vinegar and oil in a bowl and season with salt and pepper. Place arúgula, apples, half of cheese, dates, nuts and onions in a bowl. Toss with the enough dressing to coat and season.

Transfer to a salad bowl and drizzle with balsamic vinegar reduction. Garnish with Manchego cheese shavings.

Caramelized Nuts:
Preheat oven to 325°F (170°C). Line a cookie sheet with aluminum foil. Lightly grease foil. Combine sugar with vinegar in a small saucepan and heat until sugar dissolves. Add nuts and combine.

Transfer to cookie sheet and bake stirring occasionally until nuts are brown in color and syrup is thick, approximately 10 minutes. Remove from oven and cool completely. Once cold, break nuts in pieces. Keep in an airtight container until ready to use.
