BAKED HAM WITH MUSTARD AND APPLE GLAZE

   Ingredients :

1 cooked ham, approximately 11 lbs (5 k)
Cloves
1 ½ cup apple jelly
2 – 3 teaspoons Dijon mustard
Salt
Pepper

Apple Jelly
6 lb 8 oz (3 k) baking apples, quartered without peeling
Water
Sugar
Lemon juice

   Preparation:

Preheat oven to 350°F (180°C).
Score top of ham into diamonds and place a clove in the center of each diamond.
Place ham on a rack in a roasting pan and bake in the oven for 1 ½ hour.
Heat apple jelly in a small pan, over medium heat until smooth and soft. Remove saucepan from heat and stir in mustard. Pour glaze over ham and bake in oven for 40 minutes more.
Remove from the oven and let ham cool for 15 minutes. Cut and serve.

Apple Jelly
Place apples in a saucepan and cover them with water. Bring to a boil over low heat and cook apples until soft and tender. Drain for 3 to 4 hours and reserve liquid.

Measure apple liquid and pour it into a saucepan. Add the same amount of sugar and the lemon juice. Stir until sugar is dissolved and bring to a boil. Reduce heat and continue simmering until the jelly stage.
