    GÜARGÜEROS     

   Ingredients :
 
5 egg yolks
1 cup sifted flour
½ teaspoon baking powder
1 tablespoon melted butter
½ teaspoon pisco or similar
Manjarblanco *
Confectioner’s sugar, the necessary amount
Vegetable oil, to fry güargüeros

   Preparation:

Sift flour and baking powder onto a work surface and make a well in the center.
Pour egg yolks, cool melted butter and pisco into the well. Gently work the ingredients together with one hand to form a ball.

Knead dough with the palm of the hand until dough becomes soft and elastic. Cover and rest for 30 minutes.

Roll out dough on a floured surface until it is very thin. Cut in 8 x 10 cm (3 x 4 in.) rectangles. Join opposite side borders forming tubes and seal them with egg whites pressing with the fingertips.

Deep fry in very hot oil evenly. Drain on paper towel and cool. Fill with Manjarblanco and dust with confectioner’s sugar.
