Combine all ingredients with a pastry blender. Avoid kneading with hands. Chill dough 20 minutes.
Roll out dough (1/8 inches) and line a pie pan 10 inches (25 cm) carefully. Let cool.
Cheese Filling: Combine all ingredients except eggs.
Cook over moderate heat, stirring, until mixture is thick. Remove pan from heat. Cool for 5 minutes.
Beat eggs and add to mixture.
Pour filling into unbaked shell.
Roll out remaining pastry into strips and arrange on pie lattice fashion.
Brush beaten egg on top.
Bake in preheated oven 375° F (175° C) for 30 minutes.
