    CHICKEN, HAM AND BACON PATE     

   Ingredients :
 
9 oz (250 g) chicken or turkey meat cut in small pieces
9 oz (250 g) bacon cut in small pieces
1 garlic clove
1 small onion, cut in half
4 ˝ lb (125 g) smoked ham, cut in small pieces
Salt
Pepper
2 eggs
Pinch of cinnamon
1 ˝ tablespoon port or brandy
2 bay leaves

   Preparation:

Place chicken, bacon, and onion in food processor. Process until well chopped. *Add ham, salt, pepper, eggs, cinnamon and brandy and process until ham is well chopped. Transfer preparation to a rectangular loaf pan or a terrine.Place bay leaves on top.*If a food processor is not available chop finely all ingredients and proceed the same way.

Bake in preheated oven 400°F (200°C) for 40 to 45 minutes or until paté pulls away from the sides of the pan and is lightly browned.Remove from oven and refrigerate 1 day.Serve as an appetizer with crackers or in slices with a green salad.
