   Ingredients :
6 chicken breast fillets, skinless, cut in medium size pieces
2 cups passion fruit juice
1 ˝ cup water
1 teaspoon garlic, finely chopped
1 red pepper, cut julienne style
2 ají amarillo fresco / fresh yellow aji (chili), seeded and deveined cut in
1 ˝ cup green onion (green and white part) chopped
3 tablespoons arrowroot, approximately
6 – 8 tablespoons sugar
3 tablespoons soy sauce, approximately


Season chicken with salt and pepper. Heat oil in a skillet and sauté chicken until golden.

Sauté garlic in oil until tender. Dilute arrowroot in water and add to garlic. Stir in passion fruit juice, soy sauce, green onion and chicken. Bring to a boil over medium heat until chicken is cooked.

Serve with cooked white rice.
        6 – 8 servings
