Season chicken fillets with salt, pepper and paprika. Brown in a hot non-stick pan or skillet until golden. Place chicken in a medium size pan and add chopped tomato. Add onion and mushrooms. Sprinkle with parsley and oregano.
Combine tomato juice with garlic and bay leaf. Pour over chicken, cover pan and cook until chicken is tender. Remove chicken and keep warm. Simmer tomato until sauce thickens. Remove bay leaf and correct seasoning. Return chicken to pan.
Serve chicken and cover with tomato sauce. Sprinkle with chopped parsley.
