    BROILED SWORDFISH WITH GARLIC     

   Ingredients :
 
6 swordfish fillets
¾ cups olive oil
16 garlic cloves, cut in very thin slices
1 ½ tablespoon thyme
Salt
Pepper

   Preparation:

In a small saucepan, combine oil, garlic, thyme,salt and pepper. Cook at low heat until garlic chips begin to brown. Don´t let them brown thouroughly, or it will taste bitter. Strain and reserve oil and garlic separately.

Heat the broiler. Brush oil over fish and season.

Broil fish basting with the oil frequently for 4 minutes. Turn and continue cooking for 4 minutes more or until just done.

To serve, drizzle remaining oil over the fish and top with cooked garlic.
