Place a colander on a bowl and cut and remove grapefruit and orange wedges with a sharp knife. Reserve the juice.Dry wedges and arrange them in a circular form in an oven dish.
Whisk yogurt with grapefruit juice.
Combine yolks, sweetener, orange juice and ginger. Cook in a double boiler over hot, not boiling water, whipping constantly until mixture triples in volume and covers the back of a wooden spoon. Remove from heat and gradually add the grapefruit and yogurt mixture.
Cover oranges and grapefruits with this cream.
Broil in oven until surface starts to turn golden.
Serve innmediately.
