In a large bowl mix flour, sugar, cinnamon, salt, baking soda, baking powder, shredded zucchini, raisins and nuts.
Beat eggs with vanilla and oil. Fold in flour mixture and mix thoroughly.
Pour batter into 2 greased and floured loaf pans, lined with parchment paper on the bottom, to 2/3 of pan capacity.
Bake in preheated moderate oven 350 °F (180 °C) for 1 hour and 20 minutes.
Glaze: In a medium size bowl, combine all ingredients and beat well. Glaze cake with the mixture. If desired, sprinkle candied fruit on top.
