   Ingredients :
1 lb 2 oz ( k) fresh mushrooms, rinsed and cut in small sticks
1 medium white onion, finely chopped
3 tablespoons butter
1 tablespoon oil
2 cups rice
Parmesan cheese, grated (optional)
1/3 cup heavy cream (optional)


Melt butter and oil in a medium saucepan. Add onion and cook stirring until tender.Add rice and stir for 2 minutes or until rice is coated with butter.

Add mushrooms, salt and 2 cups boiling water. Combine thoroughly and cover saucepan. Lower heat and cook for 18 minutes or until rice is just cooked.

If desired add parmesan cheese and 1/3 cup heavy cream and combine.Remove from heat and mix with a fork.This rice can be served with meats
