Cook broccoli for 10 minutes in a saucepan with boiling water.
Rinse and reserve wáter. Once broccoli is at room temperature, process with 2 tablespoons of the reserved water. It should look creamy.
In another saucepan, mix wine with cornstarch and add garlic. Cook for 3 minutes in low heat, stirring until it thickens. Remove from heat and add cheese, broccoli cream, salt and pepper.
Serve warm or cold with meat, poultry or fish
