Melt 3 tablespoons butter with oil in a large deep skillet. Add chopped onion.
Cook until tender and add red pepper. Cook for 1 minute more.Pour milk and cheese to the onion and bring to a boil. Stir occasionally until cheese melts. Lower heat and gradually add 1/2 cup ground crackers. Mix well. Mixture will get thicker. Stir in cooked kernels and green onion and mix well.
If a thicker mixture is desired add more ground crackers. Season with salt, pepper and parmesan cheese.Transfer to a deep serving plate and sprinkle with chopped basil. |
