    CORN KERNELS WITH RED PEPPER AND CHEESE     

   Ingredients :
 
4 cups corn kernels, cooked
4 tablespoons unsalted butter
1 teaspoon oil
1/2 cup onion, finely chopped
1 large red pepper, seeded and deveined, finely chopped
1 1/2 cups milk
3 1/2 oz (100 g) cheese, (Edam, gouda or similar) cut into small pieces
1/2 - 3/4 cup ground crackers
4 green onion, green part, chopped
Grated parmesan cheese, to taste
Basil leaves, chopped, for garnish
Salt
Pepper

   Preparation:

Melt 3 tablespoons butter with oil in a large deep skillet. Add chopped onion.

Cook until tender and add red pepper. Cook for 1 minute more.Pour milk and cheese to the onion and bring to a boil. Stir occasionally until cheese melts. Lower heat and gradually add 1/2 cup ground crackers. Mix well. Mixture will get thicker. Stir in cooked kernels and green onion and mix well.

If a thicker mixture is desired add more ground crackers. Season with salt, pepper and parmesan cheese.Transfer to a deep serving plate and sprinkle with chopped basil.
