Combine tuna and apple in a large bowl.
Mix mustard, sesame seeds, olive oil, and soy sauce. Add tuna and apple and combine gently. Season with pepper and salt.
Before serving, let stand the preparation in the refrigerator for a while.
In a plate, gently press the tartare at the bottom of a round cookie cutter pressing gently so the preparation may stand still when the cutter is removed.
Serve with the diced avocado sprinkled with lime juice decorating the plate with Pita Chips.
