    BURGERS WITH ROQUEFORT CHEESE AND CARAMELIZED ONIONS     

   Ingredients :
 
2.2 lb (1 k) ground beef
2 ½ cups white onion, cut into thick julienne
2 ½ tablespoons butter, approximately
1 tablespoon fresh tarragon, chopped
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce
Vegetable oil
¾ - 1 cup Roquefort cheese or similar, crumbled
Optional: Hamburger rolls, halved horizontally
Salt
Pepper

   Preparation:

These burgers may be prepared on the grill or fried in the skillet. If using the grill, heat until hot.
Melt butter in a large skillet over medium heat. Add onions, stirring occasionally until soft and tender (20 minutes, approximately). Lower heat if onions start to brown. Once onions are tender, turn off heat and season with salt.
Place ground meat in a large bowl and mix with tarragon, mustard and Worcestershire sauce. It is better to use hands for mixing. Season with salt and pepper. Divide into portions and form 5 – 6 burgers.
Grill burgers and cook covered for 3 minutes approximately. Uncover and flip burgers. Top with cheese and cook for 4 minutes or until desired doneness. Remove from the grill and serve with onions on top.
If using the skillet, heat 2 tablespoons, oil until hot not smoky and fry burgers on one side for approximately 3 minutes. Flip and cover with Roquefort cheese and cook for 4 minutes more or to the desired doneness. Transfer to a plate or serving platter and cover with onions.
Serve with potato puree and salad.

Optional:
Serve also with hamburger rolls halved horizontally, previously heated in the oven.
