    CARAMELIZED SWEET POTATOES     

   Ingredients :
 
3 lb 5 oz (1 ½ k) small yellow sweet potatoes, unpeeled
½ cup white sugar
½ cup brown sugar
½ cup water
4 tablespoons unsalted butter
½ teaspoon ground cinnamon
Salt

   Preparation:

Melt butter in a saucepan (do not boil), add white sugar and cinnamon and combine. Add brown sugar and water and bring to a boil over high heat until it has the texture of a syrup. Set aside.
Arrange sweet potatoes in one layer on the bottom of a heavy large saucepan or skillet with a lid.
Sprinkle 2 or 3 tablespoons water over sweet potatoes and cover saucepan. Cook at very low heat for approximately 1 hour or until tender. Shake saucepan several times during cooking to avoid burning sweet potatoes. Remove sweet potatoes from the saucepan as soon as they are soft and tender. Peel while they are still warm and cut into 1 inch (2 ½ cm) thick slices.
Place the sweet potato slices in a slightly buttered ovenproof serving dish and pour reserved syrup over them. Bake in preheated oven to 350°F (180°C) for 30 minutes more.
Serve with meats, turkey, ham.
