    VEGETARIAN BROCHETTES     

   Ingredients :
 
6 garlic cloves, finely chopped
3 – 4 zucchini, cut into 1 in, (2 cm) slices
1 – 2 red or yellow peppers, seeded, deveined and cut into medium size pieces
2 large onions, cut into medium size triangles or baby onions
16 cherry tomatoes
16 whole mushrooms
Salt
Skewers

Marinade:
6 garlic cloves, minced
1/3 cup vegetable oil
2 tablespoons thyme, chopped
3 tablespoons dry white wine or sherry
1/3 cup soy sauce
1 ½ tablespoons sugar
2 teaspoons Tabasco
1 medium size piece of orange peel
Salt
Pepper

   Preparation:

Soak skewers in cold water for 30 minutes. Dry and set aside. Thread vegetables into skewers alternating colors. Season with salt. Place prepared brochettes in bowl and cover with the marinade for 30 minutes. Reserve the remaining marinade.
Heat grill and place brochettes, turning them frequently (5 minutes per side) brushing the reserved marinade until done.
Serve warm.

Combine all ingredients. Season to taste. Let mixture stand for 10 to 15 minutes and use as necessary.
