    BANANA MOUSSE     

   Ingredients :
 
1 ¾ cup undiluted evaporated milk
1 cup sugared condensed milk
3 ripe bananas
7 oz (200 g) ricotta cheese or cottage cheese
2 teaspoons vanilla extract
3 egg whites
2 tablespoons unflavored gelatin
½ cup water
½ cup sugar

   Preparation:

Soak gelatin in water 1 minute. Dilute over low heat (do not boil). Cool.

Blend evaporated milk, condensed milk, bananas, ricotta cheese and vanilla until soft and creamy. Pour into a bowl.
Whip egg whites until foamy and gradually start to add sugar while beating. Continue beating until egg whites are stiff (as for meringue). Fold egg whites into blended banana mixture and add diluted gelatin. Mix.

Pour mixture into a slightly oiled round pan and refrigerate until set.
Invert onto a round serving dish and serve with Pastry Cream or Chocolate Crème Anglaise.
