    BANANA PACKAGES     

   Ingredients :
 
1 can peaches in syrup (1.2 lb / 500g)
½ cup sugar
4 tablespoons rum
3 large bananas
Vanilla ice cream

   Preparation:

Drain syrup from peaches into a saucepan; add sugar, bring to a boil over medium heat and reduce for approximately 8 minutes. Stir in rum and boil for 3 more minutes. Cool to lukewarm and blend this syrup with half of the peaches.

Cut 6 aluminum foil rectangles (12x6 in / 30x12 cm). Cut bananas in half crosswise.

Cut each piece in half lengthwise and place 2 pieces in the center of each foil. Slice remaining peaches and arrange on top of the bananas. Pour syrup on top and close foil loosely first the sides and then the top to form a package. Place packages on a baking sheet and bake in preheated moderate oven to 350°F (180°C) for 15 to 20 minutes. Remove from the oven and make a crisscross cut on the center top.

Open package and place a scoop of vanilla ice cream. Serve immediately.
