Slice Camembert cheese in half crosswise and reserve.
Melt butter in a medium size skillet, add chopped pear and cook until soft and tender. Add brandy and cook one more minute. Add rosemary, mix and remove skillet from the heat. Spread pear mixture over bottom half of the Camembert cheese and reserve 2 – 3 tablespoons for garnish. Transfer cheese to a serving plate.
Return the skillet to the stove and heat balsamic vinegar and honey over low heat until mixture thickens slightly (3 – 4 minutes). Remove from the heat and cool 5 minutes.
Pour half of the vinegar and honey mixture over the cheese and pears and cover with the remaining half of cheese. Spread reserved pears on top and drizzle over with remaining balsamic vinegar and honey mixture. Garnish with rosemary and chopped walnuts.
Serve immediately with toasts or crackers.
