½ lb (225 g) soft goat cheese, at room temperature
2 ½ teaspoons fresh thyme, finely chopped
2 tablespoon, approximately, extra virgin olive oil
Black pepper
1 – 2 thyme sprig to garnish
Extra virgin olive oil, to drizzle on top

Preparation:
Combine soft cheese with chopped thyme and olive oil until well mixed. Season with salt and pepper.
Transfer mixture to a serving ovenproof mold. Drizzle extra olive oil on top and sprinkle black pepper. Place 1 or 2 thyme sprigs on top and bake in a preheated oven to 350°F (180°C) until cheese is warm and creamy, approximately 10 minutes.
Remove from the oven and serve with melba toasts or toasted pita bread triangles.
