Place pork in a large saucepan with 1 cup water, salt, pepper and 1 tablespoon oil and bring to a boil. Cook pork until tender. Remove from saucepan and drain. Reserve part of the cooking liquid and discard rest.
Add remaining oil to the same saucepan and fry pork until golden. Remove pork from the pan and reserve. Do not clean pan. Add reserved cooking liquid to pan and prepare a sauce by seasoning liquid with salt, pepper, cumin, vinegar, garlic and monosodium glutamate. Add pork and bring to a boil.
Serve with cooked cassava or yucca and with Onion Sauce.
