Portobellos marinade: Combine balsamic vinegar with garlic, rosemary, oil, salt and pepper. Marinate portobellos in this mixture for 20 minutes. Drain and set aside.
Portobello Dressing: Combine mayonnaise with portobellos, green onion, salt, pepper, garlic and water.
Salad: Arrange lettuce and spinach in a salad bowl and combine with tomatoes. Toss in portobellos and dressing.
Garnish with Manchego or Parmesan cheese shavings.
