    SPICED RICE     

   Ingredients :
 
2.4 lb (1 k) rice
1 tablespoon oil
1 tablespoon garlic, minced
3 tablespoons butter
¼ teaspoon ground cinnamon
¼ teaspoon ground clove
1 ¾ oz (50 g) toasted and chopped pecans
5 ½ oz dry apricots, chopped
3 ½ oz (100 g) raisins, chopped
2 star anise
2 ½ cup chicken broth
Salt
Pepper
1 ½ cup coca cola
½ cup red wine
Chopped parsley for decoration
Cherry tomatoes for decoration

   Preparation:

Heat oil in a saucepan and sauté garlic until tender. Add rice and stir until it is coated with the oil. Heat chicken stock with Coca Cola , wine, ground cinnamon, ground clove, star anise and salt . Add this mixture to rice and bring to a boil. Lower heat and cover saucepan. Cook rice until tender.

Meanwhile melt butter in a skillet or saucepan and sauté raisins and apricots. Turn off heat and stir in chopped pecans. Combine fruit with rice before rice is done.

Serve and garnish with chopped parsley and few cherry tomatoes.
