    BAKED MASHED POTATOES WITH ONION     

   Ingredients :
 
1 package (4 ½ oz/ 125 g) of instant Mashed potatoes
3 ½ oz (100 g) butter + butter for mashed potatoes
3 onions, cut in thin julienne style
5 ½ oz (150 g) grated parmesan cheese
Toasted bread crumbs
Optional: Shredded mozzarella cheese
Salt
Pepper

   Preparation:

Prepare mashed potatoes as indicated in the package. Season puree with salt, pepper, butter and parmesan cheese. Set aside.
Melt ¾ of the butter in a skillet. Add onion and stir to combine.
Cover skillet and let onion cook over medium fire until it is cooked but not golden. Season onion and set aside.
Place half of mashed potatoes in baking dish, previously buttered and cover with the cooked onions. Sprinkle grated parmesan cheese on top. If desired, sprinkle mozzarella cheese too. Cover with the rest of the mashed potatoes and sprinkle bread crumbs and parmesan cheese on top. Bake in preheated moderate oven to 350ºF (180ºC) until hot and slightly golden.
