Moon in Quechua; mother grain of the ancient Incas. Important in Peruvian cuisine. Contains more protein than any other grain including the eight essential amino acids.
Tiny and bead-shaped; when cooked expands four times its original volume. Its flavor is delicate and can be used in any way suitable for rice as part of a main dish, side dish, soups, salads and puddings.
