CRAB CANAPES WITH CUMIN AND PITA TOAST   
  Ingredients :
    Pita bread:
    1 tablespoon olive oil
    ½ tablespoon sesame oil
    1 teaspoon ground cumin, approximately
    3-4 pita bread, halved horizontally

    Crab:
    5 ½ (150 g ) crabmeat
    2 tablespoons sour cream
    1 ½ tablespoon green onion, finely minced, white and green parts
    1 ½ tablespoon fresh cilantro, finely minced
    ½ tablespoon lemon juice
    Drops of Tabasco
    Salt
    Pepper

  Preparation:
Pita bread:
Combine olive oil with sesame oil, salt and pepper. Brush mixtures on cut sides of pita bread. Cut each round in 8 wedges. Arrange, cut sides up, on a baking sheet. Bake in preheated oven to 425ºF (220ºC) for 10 minutes or until edges start to brown and bread is crispy. Remove from oven and cool.

Crab:
Combine crabmeat with sour cream, green onion, cilantro and lemon juice. Season with salt, pepper and drops of Tabasco.
To serve, top each toast with the crab mixture.
