Place sugar in a large heavy saucepan. Combine the egg yolks, the egg and the milk and strain the mixture. Pour mixture over the sugar and stir with a wooden spoon. Bring mixture to a boil over medium high heat, leaving the wooden spoon inside the saucepan. Mixture will separate. Let mixture boil for 25 to 30 minutes, approximately, with the wooden spoon in the saucepan. Start stirring constantly until mixture thickens. Remove from the heat and whip at medium speed, with the paddle attachment until mixture cools.
Transfer mixture to a surface and knead until dough becomes soft and smooth. Wrap in plastic wrap and refrigerate, up to one week, until ready to use.
Dough can be colored with vegetable coloring.
Knead again before using.
This preparation is perfect for making fruits, balls, flowers etc. It can also be rolled out to a thin sheet and can be used to cover a cake.
