FRUIT BROCHETTES WITH CHOCOLATE FONDUE   
  Ingredients :
    Sliced bananas, peeled and sliced
    Strawberries
    Pineapple chunks
    Fresh or canned apricot, cut in bite size pieces
    Apple, peeled, cored and cut in bite size pieces
    Pear, peeled, cored and cut in bite size pieces
    Orange, peeled and separated in wedges
    3 tablespoons honey
    1 cup of orange juice and the rind of 1 orange
    Lemon Juice
    Bamboo or wooden skewers, soaked in water for 30 minutes

    Chocolate Sauce:
    3 oz (80 g) tablespoons butter
    7 oz (200 g) dark chocolate in small pieces
    1 tablespoon cocoa powder
    3 tablespoons corn syrup

  Preparation:

Dip apples, pears and bananas in lemon juice. Thread pieces of fruit onto skewers, alternating them.

Mix together honey, orange juice and rind and heat at low heat. Remove from heat and brush over the fruit.

Place grill rack approximately 6 inches (15 cm) above the coals.

Place skewers on rack and broil for 5 – 10 minutes, until hot.

Baste with honey mixture once or twice. Remove from grill. Serve with chocolate sauce.

Chocolate Sauce:
Place the butter, chocolate, cocoa powder and corn syrup in a small saucepan. Heat over low heat, stirring until all of the ingredients have melted and are well combined.
