MORNAY SAUCE
Ingredients :
2 tablespoons butter
2 tablespoons flour
1 cup milk
6 – 8 tablespoons grated parmesan or gruyere cheese
Salt
Pepper
Nutmeg
Preparation:
Melt butter in a medium size saucepan.
Add flour and stir with a wooden spoon during 2 minutes.
Gradually add milk, stirring constantly to avoid sauce from forming lumps and sticking to the pan.
Continue stirring until sauce comes to a boil and thickens. Season to taste and add cheese.
Yields 1 ½ cup approximately
