ZUCCHINI SOUFLEE
Ingredients :
4 medium zucchini cut in slices
1 garlic clove, finely chopped
1 white onion, finely chopped
½ cup nonfat milk
2 eggs
2 egg whites
Salt
Pepper
Nutmeg
2 teaspoons butter
2 teaspoons oil
1 ½ oz (40 g) grated parmesan cheese
Preparation:
Heat oil in a skillet and cook onion with garlic until golden. Add zucchini slices and cook until crisp tender. Remove from heat and reserve.
Melt butter in a skillet or saucepan, add flour and stir. Stir in milk and continue stirring until mixture thickens slightly.
Season with salt, pepper and nutmeg. Remove from heat and add yolks, cheese, parsley and reserved zucchini. Beat whites and fold into mixture. Correct seasoning.
Transfer mixture to a previously greased baking pan (use cooking spray) and bake in a preheated oven at 375°F (180°C) for 30 minutes or until set.
