GRIBICHE SAUCE   
  Ingredients :
    3 hard boiled eggs
    1 ¼ cup oil
    ½ cup white vinegar
    herbs ( thyme, tarragon)
    Salt
    1 teaspoon mustard
    ¼ cup onion, finely chopped

  Preparation:

Finely chop egg whites and force yolk through a strainer. Blend oil with yolks. Pour into a bowl and add rest of ingredients.

Serve this sauce with cold seafood, fish and vegetables.
