SAFFRON RICE WITH APRICOTS AND ALMONDS   
  Ingredients :
    ½ cup butter
    2 medium size onions, finely chopped
    ¼ teaspoon saffron
    ¼ teaspoon ground clove
    2 ¼ cups rice
    4 ½ cups chicken broth
    ¾ cup dry apricots cut in four
    ½ cup raisins
    ¾ cup almonds, skinned and toasted, cut in 4 (pecans may be used)
    Salt
    Pepper

  Preparation:

Melt butter in a saucepan over medium heat. Add onion, saffron and ground clove and stir. Cook approximately 5 minutes.

Add rice and cook, stirring, to coat rice.

Add chicken broth, apricots and raisins and bring to a boil. Reduce heat and cover saucepan. Cook at low heat until rice is tender and liquid is absorbed.

Fluff rice with fork and add almonds or pecans. Correct seasoning.

Transfer to a serving bowl and serve.
