SPINACH SALAD WITH PEAR, AVOCADO AND BACON   
  Ingredients :
    Salad:
    ½ lb (225 g) bacon, chopped
    1 lb 2 oz (500 g) spinach leaves
    2 pears, peeled, halved, cored, seeded and cut in thin slices
    1 ½ cup red onion, cut in thin slices
    1 – 2 avocados, halved, pitted, peeled and diced
    ½ cup pecans, toasted and chopped

    Dressing:
    1 cup vegetable oil
    ¼ cup confectioner’s sugar
    ¼ cup vinegar
    ½ tablespoon lemon juice
    1 teaspoon mustard
    ½ teaspoon fresh ginger, minced

  Preparation:
Salad:
Brown bacon in a skillet over medium heat until golden and crisp.

Remove bacon with a slotted spoon and place on paper towel to rain. Combine spinach leaves, pear slices, onion, avocado nuts and bacon in a salad bowl.

Toss salad with half of dressing. Serve. Place remaining dressing in a small bowl.
