PEANUT SAUCE
Ingredients :

ají amarillo fresco / fresh yellow aji (chili)
1 ˝ tablespoons, sugar
4 oz (120 g) toasted peanuts
7 oz (200 g) fresh white cheese (cottage cheese or ricotta)
Salt
Pepper
6- 8 tablespoons, evaporated milk
˝ cup oil, approximately
Preparation:
Clean and rinse aji, removing seeds. Place ají in a saucepan with water and sugar, and boil for 8 minutes. Drain.
Place ají in a blender or processor together with the peanuts, cheese, milk, salt and pepper. With blender or processor running, gradually add oil until the desired thickness is obtained. Correct seasoning.
Yields: 1 ˝ cup approximately
