SOUVLAKI
Ingredients :
3 –4 lbs (1.5 – 2k) lamb or beef meat, cut in 1 ½ in (4 cm) pieces
Marinade:
5 garlic cloves, finely chopped
½ cup olive oil
½ cup dry white wine
Juice of 2 lemons
1 teaspoon dry oregano
3 bay leaves, cut in half
Black pepper
Salt
Preparation:
Pour over meat and combine well. Cover bowl and refrigerate for 24 hours.
Remove meat from refrigerator.
Heat grill or preheat broiler. Thread pieces of meat onto skewers. Place on grill rack or broiler tray and grill or broil, turning once until done to taste.
Serve hot.
Marinade:
Combine all ingredients for marinade in a medium size bowl.
