SNOW PEA, CARROT AND RED PEPPER SALAD WITH HONEY   
  Ingredients :
    3 medium size carrots, peeled and cut julienne
    5 ½ oz (150 g) snow peas, cut julienne
    3 tablespoons rice vinegar (may substituted for white wine vinegar)
    1 teaspoon Dijon mustard
    ½ teaspoon honey
    1 red pepper, seeded and deveined, cut julienne
    Salt
    Pepper

  Preparation:

Boil salted water in a medium-size saucepan. Add carrots and cook for 1 minute. Add snow peas and cook 1 minute more.

Drain and place vegetables in a strainer. Rinse with cold water until cool. Drain and reserve.

Combine vinegar, mustard and honey in a salad bowl. Add snow peas, carrots and red peppers. Mix well. Season to taste.

Serve.
