MEAT SAUCE   
  Ingredients :
    ½ cup oil
    2 onions, finely chopped
    2 garlic cloves, finely chopped
    2 lb 4 oz (1 k) tomatoes, peeled, seeded and dices
    1 large carrot, shredded
    Salt
    Pepper
    ¾ cup tomato juice
    1 bouquet garni, rosemary, bay leaf, parsley and sage, tied together
    1 teaspoon paprika
    4 tablespoons dried mushrooms soaked in ¾ cup wine and blended
    ½ tablespoon sugar
    ½ cup tomato paste
    1 cup chicken stock
    1 lb 2 oz ( ½ k) ground meat

  Preparation:

Heat oil in a large saucepan. Sauté onion and garlic until tender.Add chopped tomatoes, carrot, salt, pepper, tomato juice, bouquet, paprika, dried mushrooms, stock, tomato paste and sugar.

Add ground meat and combine. Cook over medium heat during 15 to 20 minutes or until liquid has almost evaporated.This sauce can be used for fettucine and lasagna.
