FRESH YELLOW AJI SAUCE
Ingredients :
1 lb (700 g)
ají amarillo fresco / fresh yellow aji (chili)
ľ cup olive oil
Salt
Preparation:
Cut, seed and devein aji (chili).
Boil water in a saucepan, remove from heat and soak ají for 2 minutes. Repeat this procedure twice. Drain and discard water.
Blend aji with olive oil and season with salt.
